- Cease use of cardboard on shelves whereas it is uncleanable. Increase lighting levels in large walk-in cooler to >=540 lux (brighter light bulbs). For bread /baked good storage ensure bottom shipping rack is empty such that the food product is protected and stored >= 6in. / 15cm off the floor. For use of chest freezers as coolers monitor warmest part and determine load limit to be <=4C. Acquire durable, smooth, easily cleanable platforms for walk-in coolers and phase out use of uncleanable temporary milk crates.
