      • Observation (CORRECTED DURING INSPECTION): Prep cooler under microwave is used to store produce and some higher risk foods. Air temperature is at 10C (your thermometer and probe thermometer) and food temperature is at 9C. Walk in cooler air temperature went down to below 4C but food temperature of several foods is slightly above 4C (6C).
      • Corrective Action(s): High risk foods (prepared foods,etc.) in prep cooler under microwave were discarded during inspection. Use only to store produce and low risk foods. Walk in cooler temperature adjusted during inspection - temperature now at 1.5C. Keep regular temperature records for coolers and use an accurate thermometer.

      • Observation: Quats sanitizer in spray bottle is at 0ppm (using test strip). Quats automatically dispensed into bucket at 0ppm and chemical container is empty (no chemical in plastic line).
      • Corrective Action(s): New chemical container was provided during inspection and after line cleared of air gaps, 100ppm quats detected with test strips. Immediately check directions on chemical bottle label and adjust concentration if required (such as 200ppm if on label).
      • Provide test strips to verify the concentration daily and instruct staff on how to make sure the concentration is as required. This is a repeat violation.

      • Observation (CORRECTED DURING INSPECTION): Small 2 door cooler in bar area air and food temperature is at 9-10C. There are berries in this cooler that have mould on the surface.
      • Corrective Action(s): Discarded milk, berries, and cut cucumbers that have been stored above 4C and /or are contaminated. Do NOT use this cooler to store any potentially hazardous foods unless it can keep them at 4C (40F) or colder. Limes, lemons,salted olives are ok and lower risk and can be kept in this cooler.

      • Corrective Action(s): Sanitizer is being dispensed at <100ppm due to air bubbles. Corrected during inspection - re-sanitize surfaces using 200ppm quats sanitizer. Provide test strips to measure the concentration of sanitizer being dispensed.

      • Observation (CORRECTED DURING INSPECTION): Hand washing sink in main kitchen is being used for food preparation, Staff preparing food during inspection.

      • Keep the hand sink free and accessible so staff are able to use a designated hand washing sink to wash hands. If a prep sink is needed, install an additional sink in kitchen and provide plans to Fraser Health.

      • Observation (CORRECTED DURING INSPECTION): Two door prep cooler air and food temperatures measured at about 13 - 13.5 C. This is in the temperature danger zone and previous inspection noted that this cooler was not to be used to store potentially hazardous foods unless it was fixed and could keep them at 4 C or colder.
      • Corrective Action(s): Potentially hazardous foods (PHFs) stored in this cooler for more than 2 hours with food temperature >4C (13-13.5 C measured) were discarded during inspection. Do not use this cooler unless it can keep all PHFs at 4 C / 40 F or colder. Keep twice daily records for this cooler.

      • Corrective Action(s): Discard all potentially hazardous foods (ie refried beans, seafood, dairy, etc.) stored in this cooler where the food temperature has been >4C/40F for more than 2 hours. Keep this cooler empty unless food is lower risk (ie high acid foods) until it can keep higher risk food at 4 C/40F or colder.

All potentially hazardous/higher risk foods (meat, seafood, dairy, eggs, cooked food, etc.) must be stored so that food temperature is at 4 C/40F or colder. Store these foods in alternate cooler such as walk in cooler or large 1 door cooler until the drawer cooler and 2 door prep cooler can keep them at 4 C or colder.
