      • Observation: Ceiling inside of ice machine by office requires cleaning.
      • Corrective Action(s): Clean and sanitize all parts of ice machine routinely. Also sanitize lids covering food bins in dry food storage area.

      • Observation: In general, premises is clean and well organized however there are mouse droppings on floor in dry storage room, storage area near office, etc. Food is in pest proof bins. Pest monitoring in place.
      • Corrective Action(s): Continue to keep food in pest proof bins and continue with licenced pest control. Please send copy of last pest control report to Fraser Health.

      • Corrective Action(s): Please adjust or repair walk in cooler as necessary to maintain 4C or colder - when staff enter have them close dose behind them as much as possible. Please implement written temperature logs for monitoring and check walk in cooler temperature twice daily

      • Observation: Kitchen staff observed wiping hands on bar rags after handling uncooked hamburger patties. This poses a risk of cross contamination via hands and rags.
      • Corrective Action(s): Please ensure that hands are washed with soap and water at hand sink after touching raw meat or chicken. Spraying hands with water or quats sanitizer is not an acceptable subsitute for handwashing.

      • Corrective Action(s): Continue with pest management program. Licensed pest control operator provides service every 2-3 weeks. Staff are doing a good job with cleaning in kitchen area, beneath cooking and prep lines - please deep clean beneath shelving in dry storage area.

      • Observation (CORRECTED DURING INSPECTION): Glassware washer used in main bar area has no sanitizer - 0ppm chlorine detected in final sanitizing rinse. Chlorine bottle is full and was changed this morning. Machine was cleaned and serviced this morning as per bartender.
      • Corrective Action(s): Glassware washer sanitizer line primed during inspection and 50ppm detected after final sanitizing rinse.

      • Observation (CORRECTED DURING INSPECTION): Commercial dishwasher was run 3 times and the final sanitizing rinse was 10ppm. The machine is a low temperature dishwasher requiring 50ppm chlorine for final rinse.
      • Corrective Action(s): The chemical container was nearly empty and was changed during inspection. Machine was run 3 x and the final rinse was 50ppm - good.

      • Observation: Evidence of rodents at back door area and in dry storage room (floor in corners). Food is in pest proof bins. Door to back of kitchen has screen.
      • Corrective Action(s): There should be no evidence of pests. Provide copy of pest control report from licenced pest expert. Monitor for pests more frequently. Clean up droppings as soon as possible. Seal any holes or gaps where pests may enter.
