      • Observation (CORRECTED DURING INSPECTION): Two bus pans of cooked rice (1 is half full, the other is full) were stored in the back prep area. Operator stated they were cooked around 2 hours ago. The half full bus pan of rice measured at 15C. The full bus pan of rice measured at 55C and was covered.
      • Corrective Action(s): Operator moved the rice into the cooler to cool. Cooked rice must cool to 20C within 2 hours after cooking and then to 4C or below within 4 hours. Fill less cooked rice in the bus pans so it can cool down faster.

      • Observation (CORRECTED DURING INSPECTION): Some food items on the steam table measured at 30-50C. As per staff, most food are hot held for around 2 hours and no more than 4 hours. However, no time tracking was observed.
      • Corrective Action(s): Staff was instructed to keep a time tracking log for food items if food items cannot be hot held at 60C or above. Food items can be reheated to 74C within 2 hours. If food items were held at 4-60C for 4 hours or more, they must be discarded. Stir food items often as the top of the food trays can be lower in temperature.

      • Observation (CORRECTED DURING INSPECTION): Repeat Offence: 1. Containers of food were stacked on top of each other all throughout kitchen (on shelves, equipement, etc.).
      • 2. A tray of raw meat was stored on the floor of the walk in cooler without a lid.
      • Corrective Action(s): 1. Do not stack food containers on top of each other as the bottom of these containers can be unsanitary.
      • 2. All potentially hazardous food must be inside a container with a proper fitting lid when being stored inside walk in cooler.

      • Observation: Repeat Violation: The back food prep. area is very crammed with boxes being stored on the floor, blocking the cooler door from opening. The deep frying area is very dirty; the deep frier is covered in grease and so is the floor around it.
      • Corrective Action(s): Make sure to follow a proper cleaning schedule and to do it more frequently to avoid build up. Also thorough organization is needed to free up space for moving around.

      • Corrective Action(s): Items were away into the fridge during the inspection. Do not stack buspan of foods on top of each other as this impedes cooling which is unsafe. Put food away in the fridge as soon as possible.
