      • Observation: Exhaust hood vents and underneath the deep fryer observed to have built-up grease. Operator informed the exhaust hood vents are cleaned every 2-3 weeks. Next third-party service company to be on December 30, 2023.
      • Corrective Action(s): Clean and sanitize the aformentioned areas. Underneath hard to reach areas must be cleaned on a daily basis. Increase cleaning frequency of exhaust hood vents to a weekly basis to prevent grease build-up. Email pictures to inspector for validation. Corrected by: January 3, 2024.

      • Observation (CORRECTED DURING INSPECTION): QUATs sanitizer in spray bottle measured at 100 ppm QUATs concentration during time of inspection.
      • Corrective Action(s): Replace QUATs sanitizer in spray bottle with fresh solution measured at 200 ppm QUATs concentration. Ensure solution is changed frequently (as per approved food safety plan) and monitored and verified at 200 ppm QUATs concentration with test strips to ensure adequate sanitation of food contact surfaces, equipment and utensils.

Contact pest control company to assess fly population and to install traps if and as necessary. Keep all food covered to protect from potential contamination from flies. Ensure all doors and windows remain closed as necessary to prevent entry of pests on site.

      • Observation (CORRECTED DURING INSPECTION): QUATS sanitizer in spray bottle in the lounge kitchen measured at 100 ppm QUATS concentration. Staff replaced sanitizer with new solution during inspection, which measured at 200 ppm QUATS concentration.
      • Corrective Action(s): Replace QUATS sanitizer in spray bottles more frequently (as per approved sanitation plan) to ensure sanitizer is at the required 200 ppm QUATS concentration to effectively sanitize surfaces.

      • Observation (CORRECTED DURING INSPECTION): Tea towels observed stored directly on top of washed produce/lettuse in the stand-up cooler next to the dishwashing area. Staff replaced towels with paper towel during time of inspection.

      • Observation (CORRECTED DURING INSPECTION): A labeled spray bottle of quaternary ammonium compounds (quats) sanitizer was measured at 0 to 100 ppm.
      • Corrective Action(s): Spray bottle was refilled at dispenser (dispensing 200 ppm quats). Ensure that sanitizer is maintained at concentrations needed for effective sanitizing (e.g. 200 ppm quats). Test and change sanitizer solutions as needed to maintain these concentrations.

      • Observation (CORRECTED DURING INSPECTION): A pair of tongs were observed to be stored within a container located in the reach-in cooler. Handle of tongs was in contact with cooked noodles stored in container.
      • Corrective Action(s): Tongs removed. Ensure that utensils such as tongs are not stored in food storage containers as the handles may potentially contaminate food.

      • Observation: 1. High temperature dishwasher was measured at a maximum temperature of 62 degrees C at the utensil surface; however, a chlorine residual was available at the utensil surface at 50 ppm. It was stated by the General Manager that the service technician had temporarily fitted the high temperature dishwasher to dispense chlorine during the rinse cycle until booster can be serviced.
      • 2. Bar glass washer appears to be leaking fluid.
      • Corrective Action(s): 2. Ensure that high temperature dishwasher is able to achieve at least the minimum sanitizing temperature of 71 degrees at the utensil surface during the final rinse (82 degrees C from the manifold). Ensure that dishes are continuing to be sanitized with chlorine in the rinse residual (at least 50 ppm) until such time. Contact the Environmental Health Officer for reinspection once high temperature dishwasher has been serviced. Date to be corrected by: September 5, 2018.
      • 3. Ensure that bar glass washer is in good working order and is not leaking. Ensure glass washer is serviced if a leak is present. Ensure that liquid that has accumulated under the glass washer is removed. Date to be corrected by: Today.

      • Corrective Action(s): All dishware run through main kitchen dishwasher for re-sanitizing. Ensure this continues as an interim measure until the lounge kitchen dishwasher can be serviced and reinspected. Contact area inspector for reinspection prior to restarting use. Unit must provide final rinse at 71 C or higher.
