    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • - Food handlers wore clean clothing and proper hair restraints.** However, improper glove use was observed:- One staff member was observed washing gloved hands after sweeping the floor.- A second cook continued to handle food after performing a cleaning task without changing gloves or washing hands.Corrective Action:These incidents were brought to the attention of the Chef. He was directed to conduct a refresher training with all staff regarding proper glove use and handwashing protocols.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The meat slicer is not being properly cleaned. Old food residue from previous use was found built up around the blade guard. The chef was directed to properly clean the meat slicer.The slicer must be completely disassembled for detailed cleaning at the end of each day.
