    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Raw basa fish was stored above ready-to-eat foods, including cake, in the countertop freezer. The staff member was instructed to relocate the raw fish. Ready-to-eat foods and raw vegetables must always be stored above raw meat and fish in refrigerated storage.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • The staff member indicated that no sanitizing cycle is being conducted during manual dishwashing. Education was provided on proper two-compartment sink procedures: wash and rinse in the first compartment and sanitize in the second compartment using an appropriate sanitizer solution.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The hand sink in the main food prep area drains slowly. Please fix it to ensure proper handwashing and drainage.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • The posted food handling permit expired in 2022. Please print and display the current food handling permit in a conspicuous location for customers.
