    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Operator had a mix of vinegar and bleach solution to sanitize food contact surfaces in the kitchen area.**Operator remade chlorine sanitizer solution, and solution was tested to be at 100ppm. **Chlorine sanitizing solution must not be mixed with any other reagents, and test strips must always be available and accessible for use.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • Raw fish and vegetables were stored together in the back line cooler. When asked, the operator advised that these were her personal items. **Please ensure that ready-to-eat food items such as raw vegetables are stored separately from raw foods to reduce risks of cross-contamination. Food items not for customer use must be labelled as such.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Food items and equipment such as pots, bags of food, and food boxes were observed to be placed directly on the floors of the kitchen area and freezers. **Please ensure that food items are placed a minimum of 6 inches off the floor.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. Minced vegetable fillings and dumplings were observed at 15.6 degree Celsius. When asked, operator advised fillings had only been out for an hour. **Operator moved dumplings and fillings into a stand-up cooler. **Dumpling fillings should be portioned under temperature control and should be kept at temperatures below 4 degree Celsius.2. There was no probe thermometer available/accessible. **Ensure a probe thermometer is available for use within the kitchen area.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • There were no test strips available to test the chlorine sanitizing solution. - Acquire test strips.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • No pest records were available for review. When asked, the operator advised that a pest control company comes in monthly for maintenance. **Ensure that pest control records are available for review.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Ventilation canopy had buildup of grease and oil. The ventilation system was observed to not have received maintenance since 2015. **Ensure ventilation system is regularly cleaned.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Area underneath the dishwashing sink and hard-to-reach surfaces were observed to have a significant amount of dirt/food build up. **Ensure to thoroughly clean the above mentioned areas.

      • **Ongoing Violation**Clean up the clutter in the kitchen and storage area.June 25, 2026: Clutter of miscellaneous items were found in the kitchen, storage, and dishwashing areas. **Declutter the area by discarding items that are no longer in use or by ensuring that items are placed on shelves/tables.
