    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • 1. Sprinklers and plastic buckets in sprout growing area were not being removed for dishwashing in 2-comp sinks. In addition, Operator mentioned that these are cleaned only once per month. **Ensure above mentioned items are removed for dishwashing (not clean-in-place). **Clean and sanitize equipment after every batch instead of once per month. 2. Chlorine sanitizer solution used to clean-in-place plastic bucket and sprinkler in sprout growing area measured 10 ppm.**Ensure chlorine sanitizer solution is maintained at a minimum of 100 ppm at all times.

      • Staff was using 2-compartment sink for rinsing bean sprouts and washing large plastic bins used for germination. - Operator stated that the 2-compartment sink is only cleaned with soap and water after dishwashing. **Ensure 2-compartment sink is also sanitized with chlorine sanitizer solution.

      • Bean sprouts in walk-in-cooler were not covered. **Please ensure bean sprouts are covered at all times to prevent from contamination.
    • 09. Are chemicals stored and handled in a safe manner?
      • Multiple bottles of clorox (bleach) were stored near the pallets of bean sprout seeds in the dry storage area. **Ensure chemicals are stored separate from food at all times to prevent cross contamination.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • **Outstanding**Few old mouse feces were observed behind the pallet on the left-hand side in dry storage area. This was missed during the clean-up. **Please remove mouse feces immediately, and properly clean and disinfect the area.

      • Few old mouse feces were observed behind the pallet on the left-hand side in dry storage area. This was missed during the clean-up. **Please remove mouse feces immediately, and properly clean and disinfect the area.

      • Bean sprout boxes were stacked directly on each other with beans sprouts from one box coming into direct contact with the bottom of the other box. **Please ensure lids/covers are used to prevent cross contamination.

      • Cardboard boxes were used for storing bean sprouts. **Ensure food grade material is used for storing bean sprouts. Note: Operator was instructed to provide documentation confirming that cardboard boxes are food-grade.

      • Facility was using pool chlorine (70% calcium hypochlorite) as disinfectant in sprout production.**Please ensure that only food-grade disinfectants are used, as pool chlorine may contain stabilizers or other additives which are not food safe. **As per Health Canada, it is recommended that bean sprout seeds should be disinfected using a 2,000 ppm food-grade chlorine solution for 15–20 minutes, followed by thorough rinsing (two options): - 33 mL of 6% bleach per liter of water- Approx. 2.86 g of 70% calcium hypochlorite per liter of water.

      • Mouse feces were observed around the pallet (left hand side) and along the wall (right-hand side) in dry storage area. **Please remove mouse feces immediately, and properly clean and disinfect the area. **Increase the frequency of pest monitoring and install additional traps if needed. **If the issues still persist, contact certified pest control company to manage the pest.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Black garden hose was being used to wash bean sprouts in 3 -compartment sink, which is not considered food grade. **Please use food grade water hoses to prevent cross contamination.
