      • Observation (CORRECTED DURING INSPECTION): Two large containers filled with approx 10L of soups each observed in the walk in cooler that were made this morning. One soup measured 37C in the middle. Reviewed cooling procedure with staff who stated soups are cooled at room temperature until they are cool enough to handle (ok) then transferred to the cooler.
      • Corrective Action(s): Soups of larger volumes in large containers (as opposed to shallow pans) must be cooled to 4C or less before being put into the cooler. Reviewed cooling options with the chef, recommend using a running cold water bath in the prep sink and stirring regularly to cool soups (and other similar foods) down significantly more before transferring to the walk in cooler.

      • Observation (CORRECTED DURING INSPECTION): Ice scoop observed being stored directly on top of the ice machine with out any protective barrier.
      • Corrective Action(s): If the ice scoop is to be stored on top of the ice machine, it must be store in a clean container.

      • Observation (CORRECTED DURING INSPECTION): Found large pot of soup in walk in cooler sitting at 41 C. Advised let sit out on counter for 30 mins to 1 hour then placed in cooler, once cool enough to handle transfer to smaller containers. No temperatures being checked.
      • Corrective Action(s): Cooling must be done as quickly as possible. Use small portions, ice baths, and/or ice wands to assist. Cooling to 20 C must be done in 2 hours or less, then cooled to 4 C or colder in under 4 hours.
      • Must follow Food Safety Plan.

      • Observation: Foods were found uncovered in coolers and freezers through out premises.
      • Corrective Action(s): Must ensure foods are properly stored to prevent contamination. Cover all foods when they are put into the kitchen.

      • Observation: Window in the back of the kitchen was open at time of inspection no screen in place. Pest control report indicates rodent activity on exterior of building.
      • Corrective Action(s): Ensure all doors and windows are kept closed or are properly screened to prevent the entrance of pests such as mice, rats and flies.

      • Observation: Heavy accumulation of food and grease found under and in behind equipment and shelving units through out the premises. Dust, and mildew accumulation found on ceiling in the dishwashing area, and grease and dust found in the ventilation hood over the cooking area.
      • Corrective Action(s): A thorough cleaning is required through out the premises to remove all food debris, mildew and grease from ceilings, walls, and under equipment and shelving units.
