      • Observation (CORRECTED DURING INSPECTION): Mildew buildup observed on the roof of the ice machine. Operator stated they will fix the issue immediately.

      • Observation (CORRECTED DURING INSPECTION): Weather stripping at the back doors of the kitchen storage area observed to have small gaps. Operator has stated they will fix the issue immediately.
      • Corrective Action(s): Repeat violation. Ensure that the weather stripping is adequately placed to ensure no gaps at formed where pests can enter into the premises. A light check can be conducted to see if the gaps have been sealed.

      • Observation (CORRECTED DURING INSPECTION): Observed cooked ground beef in hot holding set up on stove and ground beef was 44C than hot water bath (60C) suggesting that the hot water bath was being used to reheat the precooked meat.
      • Corrective Action(s): Hot holding set-ups are intended to keep foods hot, not reheat foods. Cold foods that are being reheated must be reheated as quickly as possible then put into hot holding units after they have been recooked.

      • Observation: Mold build-up observed on the inside of the ice machine on the roof of the ice bin where the ice comes out.
