      • Observation (CORRECTED DURING INSPECTION): (1) Discussed cooling procedure with owner/operator who stated that once the sauces finished cooking stay at room temperature for less than two hours (good) and are then transferred to large buckets around half full.
      • (2) Observed cooked penne in deep insert in line cooler at 20C internally. Operator stated that it was just cooked and placed in the insert for future use.
      • Corrective Action(s): (1&2) All food must be cooled to room temperature within 2 hours then from room temperature to less than 4C within four hours. To achieve this, food must put into shallow containers, small portions or an ice bath.
