      • - QUAT sanitizer in spray bottle measured at 50ppm; this concentration is too weak to achieve adequate sanitization.
      • Corrective Action(s):
      • - QUAT from source measured at 200ppm. Spray was refilled with fresh solution. Ensure to run the first bit of the solution before collecting as it is mostly water and could dilute the sanitizer solution.

      • - Ensure to place the scoopers so that the handle is not touching the food.
      • - Place has no dipper well. Ensure to use a new scooper for each order OR place the scooper in ice water.
