      • Observation (CORRECTED DURING INSPECTION):
      • Observed display hot holding for Asian deli prepackaged foods at 40-50C
      • Corrective Action(s):
      • Temperature log was available and no issues with hot holding temperature 30 minutes before the visit. Food items were instructed to be reheated again. Observed multiple heat lamps not working. Ensure to replace the heat lamps and the hot holding display unit is capable of maintaining food items at 60C or above.

      • QUATs sanitizer in 2 spray bottles inside produce processing room measured in between 50-100ppm.

      • Ensure to replace the solution on regular basis. QUATs sanitizer should be measured at 200ppm. QUATs sanitizer solution from the source measured at 200ppm.
