      • Please obtain waterproof probe thermometer for checking cooking temperatures and for checking dishwashing temperature.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Dishwasher was not working at time of inspection. Please ensure dishwashing cycle is running and is reaching 71 degrees Celsius during sanitizing cycle.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • 1. Hand sink in main kitchen did not have soap or paper towel available. Please ensure soap and paper towel is available at all times at hand sink. 2. Hand sink in Lion's bar did not have soap or paper towel. Please ensure soap and paper towel is available at all times at hand sink.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1. Light above dishwashing area did not have cover. Please install shatterproof cover. 2. There were two pieces of raw wood in pepsi cooler that had mould on them. Please remove these. If using wood, ensure it is finished so it is non-porous and easy to clean.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Door of Pepsi cooler in Lion's bar did not properly seal when closed. Ensure door seals so that temperature is maintained.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • Handles of fridges in Lion's bar were dirty. Please clean.
