      • There were contaminated cleaning cloths observed on the counter at time of inspection. Ensure all cleaning cloths are stored in sanitizer solution between use.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. When inspectors arrived there was partially prepared chicken on counter. Operators placed this into walk in cooler during inspection. Ensure that food is held under temperature control. If prep is interrupted, place high risk foods back into cooler.2. There was a bottle of sauce stored at room temperature that was labeled as keep refrigerated. Ensure storage instructions for sauces are followed. This was placed into fridge during the inspection.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Paper towel dispenser in men's washroom was empty. This was refilled during the inspection. Ensure hand sinks are stocked with soap and paper towel at all times.

      • Cloths for sanitizing were being stored on counter. These were placed into sanitizer bucket during inspection. Ensure cloths are stored in sanitizer when not in use.
