      • Paper towel was available. Please ensure paper towel is in a dispenser.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Chlorine (bleach) sanitizer was available. Sanitizer was testing too strong (bleaching the test strips). Operator remade the solution and was tested at 100 ppm.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. There were raw meat skewers sitting at room temperature next to the BBQ. Operator was advised to move these skewers into the fridge. Fridge was maintaining a temperature of <4C. 2. Cooked skewers were being hot held at ~ 55C. Operator was advised to turn up their hot holding unit to ensure they were maintaining a temperature of >60C.
