- Observed food stored on the floor in the walk in cooler.
- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- Facility was dishwashing with a QUAT-based sanitizer that is not food safe (requires a rinse with potable water). Discussed using bleach (1 tbsp of unscented household bleach per liter of water) or a different QUAT-based sanitizer that is food safe and does not require a rinse after. Operator indicated they will use bleach.

- Facility requires chlorine test strips for measuring sanitizer buckets and dishwashing (100-200 ppm chlorine required).
