      • - Missing tiles were observed on some floor area in the main floor walk in cooler and basement prep area. Ensure floors are maintained in a smooth, easy to clean and non-absorbent manner.

      • Observed food stored on the floor in the walk in cooler.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Facility was dishwashing with a QUAT-based sanitizer that is not food safe (requires a rinse with potable water). Discussed using bleach (1 tbsp of unscented household bleach per liter of water) or a different QUAT-based sanitizer that is food safe and does not require a rinse after. Operator indicated they will use bleach.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Facility requires chlorine test strips for measuring sanitizer buckets and dishwashing (100-200 ppm chlorine required).
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • Paper towel at one of the handwashing sinks on the main floor (west side) needs to be in a dispensing unit (i.e. in a paper towel holder or paper towel dispenser).
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Interior and exterior of ice machine requires cleaning.Ice scoop needs to be stored in a clean container.
