    • 29(2)(a) - INADEQUATE MAINTENANCE, CLEANING, & SANITATION PROGRAM.
      • Repair / replace ice bin cover to remove any exposure of ice to insulation. Repair / replace bottom rack in walk-in cooler. All food & packaging must be stored properly & >= 6 inches / 15 Cm. off of the floor in walk-in cooler (corrected during inspection) beverage storage or basement dry storage (corrected during inspection). Replace ceiling tiles where removed or damaged in basement dry storage. Ensure a solid smooth and washable tile is used.

      • Cook's two door fridge slightly above 4C / 40F in foods. Have unit serviced / adjusted immediately so holding <= 4C / 40F in foods. Do not use for storage of potentially hazardous foods in the interim. Retail dairy fridge in canteen not holding <= 4C /40F. Recently placed dairy products were relocated to other working refrigeration during inspection.

      • Replace expired test strips for dishwasher & keep daily records for concentration and temperature. Correct function of row of light over sinks and dishwasher.

    • 28(2) - OPERATOR FAILING TO HAVE MEMBER OF PERSONNEL WHO HAS SUCCESSFULY COMPLETED FOOD HYGIENE TRAINING PROGRAM PRESENT WHILE OPERATOR IS ABSENT FROM FOOD ESTABLISHMENT.
      • Have foodhandlers renew food hygiene training courses so at least one person with valid course on-site for every shift.
    • 29(2)(a) - INADEQUATE MAINTENANCE, CLEANING & SANITATION PROGRAM
      • Post handwash signs at handwashes. Replace expired test strips for dishwasher & keep daily records for concentration and temperature. Keep temperature log's for all refrigeration >= twice daily including corrective actions. Correct / ensure light over sinks and dishwasher work. Relocate fly strips so not over food or counters (corrected). Provide sanitizer to canteen (corrected). All food and packaging to be >=6in. / 15cm. off of the floor.
    • 33(1) - OPERATOR FAILING TO CONTROL TEMPERATURE OF FOOD SO FOOD DOES NOT DETERIORATE OR BECOME INEDIBLE OR UNSAFE.
      • Bar fridge in canteen not holding <= 4C in foods and is inappropriate design for storage of potentially hazardous foods (PHF's). PHF's recently placed were relocated to other working refrigeration and sign posted to advise staff not to use.
