      • The high temperature commercial dishwasher was tested and the max temperature was 69C after a few runs. The washer had been used several times prior to the testing as per the chef. Director was instructed to soak the dishes in bleach water after washing for the remainder of the day and until such time as the washer reaches min 71C at the plate.Manual dish sanitizing until such time as the dish sanitizing machine is repaired
