      • Observation (CORRECTED DURING INSPECTION): Lentils soup cooked more than hour ago measures at 55C. Chef is unable to explain cooling procedure correctly
      • Corrective Action(s): - Ensure that hot food are cooled from 60C to 20C within two hours and from 20C to 4C within 4 hours inside cooler.
      • - Use ice wands, stir food occassionally, use shallow pans and portion out large quantities to help food cool faster
