      • Wiping cloth solutions measured at 100 ppm quats instead of the minimum required 200 ppm.- The operator prepared new 200 ppm Quat sanitizer solutions.
    • 20. Do food handlers at the facility have adequate food safety training?
      • Currently no management level staff hold an approved certificate in food safety training.- Manager to obtain an approved certificate.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • The walk-in cooler for raw chicken has a buildup of dried food splashes/discoloration on the walls. Clean or refinish the walls.- The manager informs the cooler walls are scheduled for painting.
