- 23. Is the facility maintained in a clean and sanitary condition?
- 1) An area where food wrappers are stored on the food prep line for a beef crunch had food debris and gathered wrappers along the sides of the shelf. The operator mentioned that the area is cleaned and sanitized daily. Ensure that the shelf unit used to store the wrappers are cleaned and sanitized such that the wrappers on each shelf are removed before cleaning and sanitizing and then replaced. 2) The dry store area for items in the beef crunch were stored in an appropriate manner; however, the area underneath the shelves had a large accumulation of food debris that could attract pests. Ensure that the areas under the shelves are cleaned and sanitized regularly to prevent the attraction of pests. Add this task to the cleaning checklist to ensure that these areas are cleaned regularly.
