    • 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
      • 1) A cashier was found wearing gloves, handling money and food. A brief consultation was given regarding proper glove use including the need to wash hands between glove changes and the need to change gloves after 4 hours. Ensure that staff use gloves properly to prevent food contamination.

      • 1) Several foods set aside in a walk in cooler for the Food Bank were stored next to raw eggs. The food was moved during the inspection. Ensure that ready to eat foods are store separately and away from raw eggs. The food was moved during the inspection.
    • 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
      • 1) Containers of food were found with dust accumulation in the back loading dock and the back dry storage area. The staff mentioned the food would be discarded. Ensure food is kept at least 15 cm (6 in) off the floor to protect food from floor debris. Ensure that food for disposal is discarded regularly to prevent clutter that can harbour pests.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) Shredded cheese packages were found overstocked in an open cooler unit with a probed temperature of 7 degrees Celsius. All temperature abused packages were discarded during the inspection. Ensure that open coolers are not overstocked and food maintains a temperature of 4 degrees Celsius or below.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) A pallet of raw eggs was found in the back storage area at a temperature of 15 degrees Celsius. Since the eggs were delivered within the last 20 minutes, staff were told to move all eggs to the cooler. Ensure that raw eggs are stored at a temperature of 7 degrees Celsius or less to minimize microbe growth.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1) Packages of frozen food were overfilled in the open freezer display units. Ensure that frozen foods are kept frozen at a temperature of -18 degrees Celsius or less to prevent improper thawing that may lead to foodbourne illness.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • 1) No test strips were available at the facility. Ensure that test strips are available to verify the concentration of the sanitizer.
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • 1) A rear loading dock door was not closed properly. Ensure that exterior doors including loading docks doors are closed completely to prevent the entry of pests.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • 1) No food handling permit was displayed at the facility during the inspection. Ensure that the permit is displayed in a conspicuous place.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • 1) There was ice build up in the walk in freezer. Ensure that the walk in freezer is maintained and ice build up is removed or prevented. Ice formed in freezers is from non potable water that can contaminate food and cause foodbourne illness.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1) Dust accumulation was found on the floor in several areas in the back of the facility. These areas include near the loading dock where discarded pop bottles are stored, under shelf units in the back dry storage area and in hard-to-reach areas around the legs of shelf units and equipment. Ensure that all floor areas are cleaned and sanitized regularly.2) Bottom shelves in cooler units were found dirty with food debris. An area with fresh produce was found with food debris. Ensure that areas where food debris commonly accumulates including the bottom shelves and areas around fresh produce are cleaned and sanitized regularly to prevent contamination of food.3) The mop sink area was found dirty. Ensure the mop sink area is cleaned and sanitized after use. Ensure that drains in the facility are cleaned and sanitized weekly to prevent the accumulation of food and the attraction of pests.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • 1) A floor buffer was found stored in the ladies' washroom. Ensure that equipment is store in another place. 2) The vents in both washrooms were found dirty. Clean the vents.3) The paper towel dispenser was found dirty in the men's washroom. Ensure that the paper towel dispenser is cleaned every day. 4) The toilet paper dispenser in the ladies' washroom was in disrepair. Ensure the toilet paper dispenser is functional.
    • 24. Is solid and liquid waste being managed in a suitable manner?
      • 1) There was pharmaceutical waste including used gloves found outside of the dumpster behind the facility. Ensure that the waste for the facility is discarded properly inside the dumpster. Monitor the area around the dumpster daily to prevent a nuisance that attracts pests.
