- Corrective Action(s): Discussed with staff on site, manual warewashing must be conducted in the following way:
- 1) Wash with soap
- 2) Rinse with clean water
- 3) Sanitize for at least 2 minutes
- 4) Air dry

- 2. Bleach surface sanitizer in the back bleached out test strip paper
- Corrective Action(s): 1. Ensure that there is always a foodgrade approved sanitizer in the front and back area. Do not use lysol wipes on food contact surfaces
- 2. Prepare 100 to 200ppm concentration for bleach surface sanitizer. Excessive amounts of bleach can introduce chemical contamination and corrode surfaces
