      • Observation (CORRECTED DURING INSPECTION): Manual warewashing procedures were incorrect. Premises was performing warewashing in the following steps: wash, sanitize, rinse, air dry.
      • Corrective Action(s): Discussed with staff on site, manual warewashing must be conducted in the following way:
      • 1) Wash with soap
      • 2) Rinse with clean water
      • 3) Sanitize for at least 2 minutes
      • 4) Air dry

      • 2. Bleach surface sanitizer in the back bleached out test strip paper
      • Corrective Action(s): 1. Ensure that there is always a foodgrade approved sanitizer in the front and back area. Do not use lysol wipes on food contact surfaces
      • 2. Prepare 100 to 200ppm concentration for bleach surface sanitizer. Excessive amounts of bleach can introduce chemical contamination and corrode surfaces
