- Observation (CORRECTED DURING INSPECTION): Staff stated that the meat slicer is cleaned and sanitized at surface level without disassembling the slicer during the day every 1 hour. The night staff completely dissassemble the meat slicer. Observed food debris inside the parts of the meat slicer.
- Corrective Action(s): At minimum, disassembe the slicer and clean/sanitize at every 4 hours if it was used.
- This is to prevent growth of microorganisms from the food debris left on the meat slicer, which in turn can contaminate new meat slices when cutting.

- Corrective Action(s): Operator returned the baked chicken to the oven, and all chicken were reheated to 74C, probe thermometer available.
- Please always ensure all foods are reheated to minimum 74C, this can be verified by probing the thickest part of the food product.

- Observation (CORRECTED DURING INSPECTION): 1) Hot potentially hazardous foods stored/displayed below 60C. Pizza in hot holding unit less than 60C. 52C on thermometer on unit. 49C ambient air using thermometer inside unit. Staff do not have logs available, temperatures are not being checked daily. Sausage roll 47.6C using probe thermometer (internal temperature). Staff indicated the sausage rolls/pizza were placed into the hot holding unit less than 2 hours prior to inspection.
- 2) Chicken Hot holding unit, taquitos probed using thermometer at 50.8C (internal temperature).
- Corrective Action(s): 1) Hot holding unit was adjusted to increase holding temperature by staff during inspection.
- Ensure pizza/sausage roll unit holds food at least 60C to prevent bacteria growth. Monitor the temperature of the food using a probe thermometer. Internal temperature must reach 60C within the next 2 hours, if it does not, discard the product.
- 2) Adjust to maintain at least 60C. Follow same monitoring procedure for the food as noted above for other hot holding unit.
- Ensure staff are monitoring hot holding unit temperatures daily. Log temperatures twice a day and keep logs on-site for review.
