      • Observation: Sliding roller-screen door at the side entrance to the kitchen is not securely attached at the floor, potentially allowing pests to enter the premises when the exterior door is propped open for airflow.
      • Corrective Action(s): *Install a rigid plastic/wood/etc panel along the floor in the doorway to prevent pests from entering the premises.
      • *Consider replacing the existing screen door with a different design (with the screen mesh secured at the floor level).

      • Corrective Action(s): *Schedule a deep-clean of the restaurant within 2 weeks to thoroughly clean affected areas, as noted.
      • *Maintain a cleaning schedule to ensure all areas of the food premises are regularly cleaned by staff (including hard-to-reach areas)

      • Observation (CORRECTED DURING INSPECTION): 0ppm residual chlorine sanitizer detected in the low-temp dishwasher.
      • Corrective Action(s): Possible air-leak in the sanitizer supply tubing connected to the dishwasher. Connected the sanitizer supply to the rinse-aid pump and primed it for use as a temporary measure. 50ppm chlorine is now being detected in the rinse water after completion of dishwashing cycle.
      • *Repair technician for the dishwasher is already on-site to address the issue.
      • *Ensure to check chlorine sanitizer level in the dishwasher on a daily basis using a test strip
      • *Ensure to prime the pump after changing chemical supplies for the dishwasher (to remove air bubbles from the tubing)
