      • Observation: Mouse droppings noted on counter and floor. General counter and shelving spaces look well maintained and clean notwithstanding the droppings.
      • Corrective Action(s): Continue to train staff to clean and sanitize space at start of shift prior to event. Make sure staff isolate food and service items at the end of shift so mice can't access. Continue to get staff to break down boxed and remove as mice are chewing. discard when chewing items observed.
      • Make sure this concession is included in systematic rodent access control measures as discussed.

      • Observation: Mouse activity noted on floor in concession. Noted along wall at grease trap extending to exit door. Also droppings noted on shelves. Some food debris noted behind grease trap and garbage cans. Otherwise this concession is pretty clean.
      • Corrective Action(s): Make sure staff clean up all food debris. Make sure staff commit to clean and sanitize step after each event and prior to next event if droppings noted on shelving or counter.

      • Observation (CORRECTED DURING INSPECTION): Both hot holding units in concession not turned on. Fuse? Mac and cheese & toppings measured at 30 C.
      • Corrective Action(s): Discarded food in inserts. Replaced. Turned on at fuse box.
      • **Improve/secure inserts in hot water bath such that they won't tip and become further contaminated.

      • Observation: Work surfaces and double dish sink dirty (sink contents mouldy).
      • Corrective Action(s): Prior to opening make sure staff completely clean and sanitize all work surfaces. Remove mouldy container from area. After event is completed, defrost and clean inside out the under counter cooler.
