      • 4. 3rd floor ice scoop to be washed daily and kept in a washable container that is to be washed daily as well. Wash ice scoop today prior to use.

      • Observation: Receiving area still a significant problem for the fruit/drain flies. Black organics bin still unlidded and inside. Significant flies noted in and around:
      • - the dust bin/collectors, which are dirty with food debris;
      • - dirty mop head blue bin and dirty cloth blue bin;
      • - minor activity noted in the janitor room and on the walls of the receiving area.
      • Corrective Action(s): Stop the use of blue bins for rag and mop head storage. Replace with proper bins with lids. Keep the organics bin outside and covered at all times. get a lid for the organics transfer bin.
      • Refine or detail the sanitation plan (written procedures) to address the daily cleaning of all garbage, organics, mop and rag bins.
      • The cans and plastics bins outside should be considered a contributing factor in the breeding environment of the fly population and should be addressed in the sanitation plan. At the time of inspection the containers look very well cleaned prior to disposal. Keep up with this.
      • Pest control contractor should provide traps to help control/reduce the active adult populations. These can be placed and replaced on a regular basis in some of the key areas of the kitchen and receiving areas.

      • Observation: Quats main feed at sink is not functioning properly. No residual noted in solution during manual dishwashing process. Emtied and re-tested and again residual noted less than 100 ppm.
      • Corrective Action(s): Immediately switch to manual feed of Quats concentrate. Establish proper dose to obtain 200 ppm.
      • Have unit serviced by technician.
      • Test and record daily logs of testing results as you do for cooling units.
      • This requires follow up inspection. See date noted on report.

    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Significant fruit/drain fly infestation observed, especially in the back storage area. Overflow populations noted in areas of the kitchen (none noted in the servery area). Organics transfer bin in storage area full of flies. Probably attracting and providing breeding opportunities through the organics program.
      • Corrective Action(s): Actions must be implemented to significantly reduce the fly population in food services.
      • - Consult Pest Control Technician for advice on immediate and systemic reduction in populations.
      • - Do not keep organics inside building. Relocate to landing bay for receiving.
      • - Make sure lids are in place for all organics bins.
      • - Continue to target hidden areas of ponding water and keep dry. Target floor drains on daily basis to reduce breeding opportunities.
      • Follow up inspection needed. See date noted on report.

      • Observation: Janitor rooom is a mess. Basin completely dirty and crusted over with old debris. Floor not good either.
      • Parts of the ceiling in kitchen dirty.
      • Corrective Action(s): Clean up this room and keep cleaner. This room should be part of drain control for pests.
      • Ceiling tile needs cleaning.

      • Observation: Ceiling tile missing, dirty, and or not of proper design. Support network beginning to rust in some parts of kitchen, especially by dish pit.

      • Develop a plan to replace or paint rusted ceiling surfaces.

      • Observation: Observed a couple of areas with excessive build up (minor) of food debris and/or generally dirty:
      • - Vegetable walk in cooler floor, specifically behind wheels/legs of shelves;
      • - base of prep cooler inner cavity;
      • - shelf above beverage counter in serving area.
      • Corrective Action(s): Clean up this area. Review cleaning procedures with staff.

      • Observation: Fruit flies still around, but at a minor level.
      • Corrective Action(s): Continue to use walk and walk product with foaming applicator to drains and priority areas. Beverage dispensing area is the primary breeding environment. Ensure clean up is thorough and complete on daily basis.
      • **Recommend the garbage container in this area is cleaned daily (including trolly), the base is sprayed with wash and walk product, and a fixed lid is in place to reduce general activity.
      • **Continue to explore and clean up residual damp and beverage enriched areas (drip tray and line) and perhaps cap off drain lines when not in use.

      • 309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
      • Observation: Sani-buckets not consistently filled with quats solution. Quats spray bottles not in good working order.
      • Corrective Action(s): Ensure all sani-buckets contain quats at 200 ppm at all times when in use. If soap and/or water is desired for a particular application, use an alternative bucket or container. Green coloured containers are available and used for non-sanitizing applications.
      • **Obtain a new set of replacement quats spray bottles.

      • Observation: Drain flies observed in the kitchen service area. Floor drains appear to have accumulations of sludge around the edges which provide harbourage and breeding opportunities. Juice trough in service area is not sufficiently maintained and is acting as a harbourage, food and/or breeding environment.
      • Corrective Action(s): Continue to work on and keep clean all areas where the drain flies are known to breed. Is Wash N' Walk product still in use? is it effective?

      • 309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
      • Observation: Observed several Quats spray bottles in kitchen area contain chemical other than Quats. Other spray bottles contain quats, but have additional labelling. This is confusing and unsafe.
      • Corrective Action(s): Review uses for all spray bottles and properly label accordingly.
