    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Soiled cleaning cloths were noted not being stored in a sanitizing solution- ensure cloths are stored in a sanitizing solution in between uses. Otherwise, use single use paper towel
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Manual dishwashing is not being conducted properly, and a dedicated handwashing sink is not available. A 3-compartment sink is available onsite. Use the following procedure:- ensure the first basin is dedicated as the hand washing sink - the second basin will be for washing and rinsing dishes and utensils- the third basin will be for sanitizing dishes and utensils. Fill sink and prepare chlorine sanitizing solution at 100ppm (check using test strips) and let dishes soak, fully immersed, for 2 minutes.

      • Chlorine test strips were not available to verify sanitizer concentration- ensure to obtain test strips
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • There was no supply of paper towel at the hand sink- paper towel was stocked during the inspection

      • Pest control records were not available - ensure pest control measures are being taken and recorded monthly. ensure records are retained onsite.
