      • Observation (CORRECTED DURING INSPECTION): Eggles mayonnaise containers with label stating 'keep refriderated' was displayed at room temperature. Operator was not able to ensure it those containers of mayonnaise are shelf stable.
      • Corrective Action(s): Staff was asked to move those containers to the cooler. Make sure all cold potentially hazardous food items are stored at or below 4C at all times to prevent growth of pathogens that can potentially cause foodborne illness.

      • Observation (CORRECTED DURING INSPECTION): 1. Food contact surfaces are not cleaned and sanitized properly. No sanitizer available to clean surface at the time of inspection.
      • 2. No sanitizer available for manual dishwashing at the time of inspection.
      • Corrective Action(s): 1. Make sure food contact surface sanitizer is available at all time to sanitize all surfaces to kill pathogens that can potentially cause foodborne illness. Ensure you have 100 ppm bleach or 200 ppm QUATS solution to sanitize these surfaces.
      • 2. Make sure you have at least 50 ppm chlorine or 200 ppm QUATS available to sanitize dishes. This will prevent any potential cause of foodborne illness by killing pathogens. Operator / Staff was able to make 100 ppm bleach solution during inspection.

      • Observation: lot of debris build up in coolers, under and behind equipments. Floors have food debris and crumbs.
      • Corrective Action(s): Routinely scrub all corners and hard-to-reach areas, such as under and behind equipments. Clean floors after spill to prevent accumulation of debris. Clean inside of coolers and freezers to prevent debris build up and potential contamination of food items.

      • Observation: Cooler by the cook line was not working at the time of inspection. Food items in cooler were just placed 15 min prior to inspection. Temp 6.5C
      • 2. Freezer by the oven was not working, temperature registered 22C. No items stored in this unit.
      • Corrective Action(s): 1. All items were moved to different working cooler. D not store anything until cooler gets fixed.
      • 2. Do not store any food items until freezer unit get fixed. To prevent any growth of patogens do not store cold potentially hazardous food items in these units. Operator mentioned they already contacted mechanic to get these units fixed.

      • Corrective Action(s): always cool hot foods from 60C to 20C within 2 hours and then from 20C to 4C within 4 hours. cool foods quickly by : 1) using a shallow container 2)using an ice bath or ice wand. This can prevent pathogen growth and make people sick

      • 2. Boxes of food containers and food products were stored in one washroom. Washrooms are contaminated and cannot be used to store food products or equipment. Boxes of food were also stored in the electrical room.
      • Corrective Action(s): 1. Ensure to only use food grade containers for food storage.
