Reviewed cooling process, staff stated that they use an ice/cold water bath to cool soups/sauces before transferring to containers which are then put into the walk-in cooler.
- Corrective Action(s): Any soup/sauce that is transferred to large containers such as the 20L pails *must* already be 4C or less before being put into the cooler due to the slow nature of heat transfer in large containers. To aide in cooling larger batched of foods quickly, foods can be transferred to bus pans where the food is 2" thick or less. Alternatively ice packs/wands can be used in the large containers to reduce the internal temperature to 4C or less before transferring to the walk in cooler.
