      • Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer buckets measured at approximately 10-50 ppm.
      • Chlorine level should be at 100-200 ppm to ensure adequate disinfection of food contact surfaces (5-log reduction of bacteria). Increasing disinfectant level will help ensure that customers do not receive foodborne illness from inadequate disinfection. Corrected during inspection.
      • Ensure that bucket solution is replaced often enough to maintain 100 ppm Cl.
