- Observation (CORRECTED DURING INSPECTION): 1- Adequate food contact surface sanitizer not available in the kitchen, cook line and bar area. It was observed that the QUAT sanitizer dispenser not working properly. Operator refilled the sanitizer bottles at the time of inspection. Spray bottles were labeled and provided in the kitchen, cook line and at the bar. QUAT 200 ppm has been detected in the solution.
- Reminder: Ensure to obtain test papers to test the sanitizer concentration. QUAT concentration of 200-400 ppm is required to be present in the solution.
- 2- Glass washer lacked sanitizer concentration at the final rinse. Operator provided chlorine sanitizer at the time of inspection. Chlorine 50 ppm has been detected at the final rinse.
- Obtaine chlorine test papers as discussed. Test final rinse sanitzer at least daily to ensure sanitizer solution has the right concentration.
