      • A refrigeration unit, being the milk and cream dispenser in the coffee station, was measured at 10°C. The inspector informed the manager/operator that all high-risk food items must be stored at or below 4°C. During the inspection, the milk and cream were discarded. The unit-in-question must not be used until fixed or able to maintain a temperature of 4°C or below. **FIX THE REFRIGERATION UNIT.

      • The internal temperature of the junior chicken patties in the hot-holding cabinet were measured at 54-56°C. All other food items in the cabinet were adequately held. The manager configured the cabinet settings, and the temperature was measured at 60°C afterwards. The inspector informed the manager that all food items in the hot-holding units must be maintained at or above 60°C at all times.
