- 07. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Critical)?
- 1) Takeout boxes for sandwiches were found wet near the fry station. The boxes were discarded during the inspection. Protect containers that house food from contamination. Ensure food containers are stored in a sanitary manner.
- 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
- 1) Boxes with raw meat were found stored next to ready to eat foods including tortillas and shredded cheese in the walk in freezer. The boxes were moved away from the meat during the inspection. Ensure that raw meats and raw eggs are stored away from ready to eat foods to prevent food contamination.
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- 1) The weatherstripping along one of the back doors and an entrance door was found in disrepair with gaps. Ensure that weatherstripping on all exterior doors is in good repair and prevents the entry of pests. Repair the weatherstripping.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- 1) A silver material divider found on the muffin toaster was frayed. Ensure that all surfaces including dividers on muffin toasters are in good repair and cannot contaminate food. Replace or repair the divider. 2) Scissors that are used to open food items including sugar and cream were found dirty and stored on a food prep surface. Ensure that utensils including scissors are cleaned and sanitize between uses and stored in a sanitary manner.3) Trays used to display baked goods in the front service area had noticeable wear. Ensure that trays in contact with food items are in good repair, are durable, easy to clean, impervious to moisture and smooth. Replace the trays. 4) A pair of reusable gloves that are used to clean the grill were found in the back dish pit area. The gloves had a white residue on them and appeared worn. Ensure that gloves used to clean the grill are in good repair and are clean without any residue that may contaminate food equipment or food.
- 23. Is the facility maintained in a clean and sanitary condition?
- 1) Several high touch surfaces including light switches, door handles, and front panels of equipment including a label dispenser were dirty. Ensure that these high touch surfaces are cleaned and sanitized throughout the day.2) An accumulation of dust and food debris was found on shelf units, carts, the cupboard with baked goods, under shelf units in the walk in cooler and freezer, in floor joints in the walk in coolers and freezer, near the label dispenser, near the sugar dispensers, seams inside the cream coolers, seams along the cooking line, and areas under bags in packing area. Ensure that these areas are cleaned and sanitized to prevent food contamination and attraction of pests that can cause foodbourne illness. 3) Hard water buildup was noted on the hot water dispenser. Ensure that the tap for hot water dispensing is descaled, cleaned and sanitized regularly.4) Grease build up was noted around the fry station. Ensure that this area is cleaned and sanitized regularly to prevent grease accumulation that can cause fires and attract pests. 5) Two mop sinks found at the facility were dirty and had accumulation of floor debris. Ensure that the sinks are cleaned and sanitized regularly to prevent the attraction of pests.

- 1) A hand dryer in the men's washroom was in disrepair. Ensure that the dryer is repaired. 2) Vents in both public bathrooms were dirty. Ensure that the vents are cleaned regularly.
