      • Corrective Action(s): Discussed proper cooking practices, ensure cook wieners to 74 C internal temperature then keep above 60 C. Purchase a probe thermometer to determine internal temperature of wieners to ensure they are properly cooked.

      • 2. Staff also advised using "antimicrobial" cloth to clean surfaces.
      • Corrective Action(s): 1. Reminded staff of proper sanitizing steps.
      • i. Wash with soap and water
      • ii. Rinse
      • iii. Soak in Sanitizer for 2 mins (100 ppm chlorine)
      • iv. Air dry.
      • Remind all staff of proper manual warewashing steps
      • 2. Do not use "antimicrobial cloths" on food contact surfaces without the use of an actual sanitizer like quaternary ammonium or chlorine bleach.
