    • 09. Are chemicals stored and handled in a safe manner?
      • An opened pack of rodenticide labeled “Rat and Mouse Killer” was observed in the back of house. The staff member was instructed to discard it immediately. Only traps should be used inside the establishment, and operators should rely on certified pest control services.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Frozen meat and chicken were observed thawing in standing water at room temperature. The staff member was instructed to immediately move the products to the cooler. Proper thawing procedures were reviewed, including thawing under refrigeration at 4 °C or lower or under fully submerged cold running water.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The hand sink located in the meat cooler was obstructed by large cartons of meat. These were relocated by staff. Hand sinks must be easily accessible at all times.

      • Chlorine test strips not available (100-200ppm required).
    • 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
      • Pest control checklist is not being filled out monthly for the self-monitoring of pests. Please fill this out monthly and keep the records onsite.
    • 18. Are general nuisance conditions, other than those noted in other violations, being prevented at this food facility (Non-Critical)?
      • One of the coolers in the front is missing a thermometer.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Light in walk-in freezer requires a cover.
