      • Observation:
      • Accumulated grease on exhaust filters, and on the wall (especially behind & below the prep table) beside the deep fryer. This will attract and breed pests (rodents, cockroackes, or flies).
      • Corrective Action(s):
      • Wash the exhaust filters and wall beside the deep fryer to remove the grease, with hot soapy water/degreaser and a scrub brush. Wash the filters every week, and wash the wall every night.

      • Observation:
      • Materials covering lower shelves, in the kitchen, are not durable or cleanable. This will allow accumulation of food and debris, which will attract pests.

      • Cover the shelves with materials that are food grade, durable, sealed, and cleanable. Suggested purchasing large, metal baking sheet to put on the shelves and then place items on the baking sheet. The baking sheet can be removed and cleaned in the dishwasher.

      • Observation (CORRECTED DURING INSPECTION): Marinated raw chicken stored dierectly on top of romaine lettuce in the upright cooler.
      • Corrective Action: Organize cooler so that RTE foods are stored above raw meats to prevent contamination . Move raw chicken to different cooler

      • Observation:
      • The walls and floor behind the chest freezers in the dry storage room has accumulated food debris. This will attract and harbor pests.
      • Corrective Action(s):
      • Wash and clean the walls and floor behind the chest freezers by pulling them away from the walls. Cleaning of this area shall be done on a regular basis, determine a schedule this is done to prevent accumulation of food debris.

      • Aluminum foil and cardboard is lining surfaces and have accumulated food debris on it. Foil and cardboard is changed "when they appear dirty". The accumulation of food debris will attract and harbor pests.

      • Aluminum foil and cardboard must be changed everyday, at the end of the day. New foil and cardboard must be installed in the morning.
