- The door gasket on the u/c cooler, in the front service area, doesn't seal tightly. Cold air is leaking out and the temperature fluctuates betwee 4C-6C in the cooler.
- Corrective Action(s):
- Immediately call a company to fix the door gasket so it tightly seals and closes the cooler door, so the temperature is maintained at 4C or colder at all times. Do not store perishable food items in the cooler until it can maintain 4C or colder at all times.

- Observation (CORRECTED DURING INSPECTION): Meatball & sauce mixture observed at ~30 degrees Celsius inside insert at time of inspection (2:30pm). The heating element was turned to 'off'. Employee was unsure how long the product had been below the minimum hot-holding temperature of 60 degrees Celsius.
- Corrective Action(s): Discard remaining product from the hot-holding unit. Ensure to keep the hot-holding unit on and maintaining a minimum temperature of 60 degrees Celsius while storing foods in the inserts.
