      • Observation (CORRECTED DURING INSPECTION): Ambient temperature of left sandwich prep cooler in the kitchen observed at 7C.
      • Corrective Action(s): Operator has placed ice in the cooler and placed the lid on top. Ensure the cooler can maintain 4C or less even during rush hour. Place cooler lid down when it is slow.

      • Corrective Action(s): Operator has manually made quat sanitizer solution for the meantime. Ensure to get the dispenser fixed and manually make quat or bleach solution until the dispenser can reach proper sanitizer concentration.

      • Observation (CORRECTED DURING INSPECTION): Various food items stored in prep cooler across from stove were at 9-11 deg C
      • Corrective Action(s): As discussed, any food items in cooler that have been stored above 4 deg C for longer than 4 hours must be discarded. Staff indicated food items had just been placed. Move all potentially hazardous food items to one of your working coolers.

    • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation (CORRECTED DURING INSPECTION): A few rodent droppings observed in dry storage room in the corner, showed this to staff member.
      • Corrective Action(s): Staff member cleaned area and removed droppings. Ensure to continually clean all floors and maintain them in sanitary condition

      • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Prep cooler across cooking area was at 10-11 deg C throughout. Also showing this temperature on the thermometer inside the cooler.
      • Corrective Action(s): Repair or adjust cooler to maintain internal temperature of 4 deg C or less. Chef on site indicated they would be calling to have it repaired.

      • Observation (CORRECTED DURING INSPECTION): Food inside inserts at line cooler across stove were 8-10 deg C
      • Corrective Action(s): As discussed, all foods in inserts must be used within 4 hours as you do not cover these food items (ie. they are always warm and exposed to the heat from the stove). The warm temperature of the food will lead to bacterial growth. Any foods in inserts not used within 4 hours must be discarded. Alternatively,you can install a cover over the inserts to keep them at 4 deg C or less.

      • Observation: Rodent droppings observed in dry storage room (on floor around flour bin and along the wall of that same side of the room)
      • Corrective Action(s): 1) remove all droppings and sanitize areas
      • 2) Owner indicated that pest control visits are currently weekly. Send a copy of the latest pest control report to the district EHO
