    • F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
      • Observation(s): Please confirm (by April 24th) the purchase of a new 72" prep table refrigerator that was indicated to have been ordered as a replacement for the one that has been removed. Please also confirm installation by May 15th in order to support refrigerated storage of toppings, dressings, sauces, in upper prep table inserts.
    • F2.1 Does the facility have proper monitoring supplies?
      • Observation(s): Please ensure that thermometers are provided inside all refrigeration units and that daily temperature monitoring records for refrigerators and hot holding are maintained within the unit.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): Please clean flooring, underneath equipment, etc to remove organic build-up by April 29, 2026. Please confirm repairs to holes in floors, etc by May 15, 2026, Please confirm replacement of the entire floor surface as indicated and repair to the worn door threshold by Oct 15th, 2026 (note that surfaces must be of light colour, cleanable, smooth, durable, tight fitting, etc).
    • F2.7 Are there handwashing stations available and properly supplied?
      • Observation(s): Water tank had not yet been filled and the pump not yet connected at the start of inspection and food preparation had already begun - Water tank was filled by operator and pump turned on to restore hand washing and water supply to the unit. Please ensure that water supply, hot and cold running water are started before beginning food preparation and ensure that staff are washing their hands at the beginning of the shift and as required on an ongoing basis. Please hardwire pump with an on/off switch so that the positive lead does not need to be removed from the battery.

    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): The general sanitation was poor upon arrival including food contact surfaces (e.g., prep table). The floors, walls, doors and exterior coolers and freezers were all grubby.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): The mobile needed much better organization and cleaning.

    • F2.1 Does the facility have proper monitoring supplies?
      • F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.
    • F2.4 Are proper freezing and thawing procedures followed?
      • Observation(s): One of the chest freezers stored outside of the mobile unit was measured -8C to -2C. Operator had moved all foods to a working freezer and instructed to monitor its temperature.
      • F2.4A Potentially hazardous frozen food must be maintained at -18 °C (0 °F) or colder.
