      • The concentration of quat based food contact surface sanitizer in the wiping cloth bucket measured less than 200 ppm. Solution was remade and concentration again measured less than 200 ppm. Solution was adjusted and then concentration measured 200 ppm.As discussed, when testing the concentration of quat sanitizer with test strips, do not swirl the test strip in the sanitizer solution, and submerge the test strip for 10 seconds as per the instructions on the test strips being used during inspection (not 40 seconds).

      • Some floor tiles were missing in front of the three compartment dishwashing sink.Replace missing tiles.
