    4 infractions

    • F1.7 Are foods protected from contamination?
      • Observation(s): Observed raw animal proteins stored above &/or in too close proximity to ready to eat food inside the walk-in refrigerator. • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): Quaternary ammonia sanitizer solution measured from a sanitizer bucket showed 0ppm Quats. Once refilled from the wall mounted dispenser, 200ppm was restored. Please ensure that sanitizer buckets are changed at a frequency that maintains 200ppm quats solutions, tested daily with test strips and that an adequate volume of solution is filled within each sanitizer bucket to assist with better maintenance of sanitizer concentrations once a cleaning cloth is used. Note that microfiber cloths are recommended for quaternary ammonia sanitizer, however, if cotton cloths are used, please ensure use of only one smaller cloth per bucket.
