Coolers measured at 4°C or below, freezers measured at -18°C or below. Hot holding >60°C. Temperature logs and glasswasher sanitizing log measured daily. Rodent traps in place. Island Pest control provided service monthly. Surface sanitizer measured at 200 ppm QUAT.
