What these findings mean

Health authorities word their violations differently, so we group them by what they mean for food safety. Higher-risk findings are the ones inspectors treat as critical, because they can directly make someone sick.

  • Cleaning and sanitizingHigher risk

Anything that touches food, such as cutting boards, dishes and utensils, must be washed, rinsed and sanitized. Inspectors check dishwasher temperatures, sanitizer strength and how wiping cloths are stored. Poor sanitizing lets bacteria survive from one use to the next.

Recorded once on September 15, 2021. For example: 3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?

    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): Sanitizer solution in 3 compartment sink observed at 100 ppm QUATs solution. Corrective Action: Ensure sanitizer solution at 200 ppm QUATs solution. Change or test solution every 2 hours to ensure at proper ppm. Further looked into facility's QUATs solution to investigate if using the proper test strips (QT-10 or QT-40). The ZEP Supermarket Sanitizer is a 2 component quaternary solution; QT-10 test strips are sufficient to test the solution. Additionally, the QUATs solution is non-oxidizing, so it is okay to store with the vinegar.
