      • -A low-temperature chlorine-based dishwashing procedure is currently being followed while awaiting the return to the high-temperature dishwasher.-During the inspection, the sanitizer concentration was tested and found to be greater than 100 ppm. However, the facility does not have a test kit available to regularly check and monitor sanitizer concentration.-Please obtain an appropriate sanitizer test kit, store it in an easily accessible location, and ensure that sanitizer concentrations are routinely checked, monitored, and logged to maintain food safety.
