      • Quats sanitizer dispenser was dispensing a 0ppm sanitizing solution- ensure dispenser is serviced and capable of dispensing 200ppm quats sanitizing solution

      • Dirty cleaning cloths were noted on the counter of the prep table in the back without a sanitizer bucket. Operator was informed and removed the dirty cloths. - ensure all cleaning cloths are stored in sanitizer buckets to prevent the growth and spread of bacteria.
    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Quats sanitizer was noted insufficient at 100ppm. Operator was informed and the sanitizer was changed and deemed sufficient. - Ensure that Quats sanitizer is changed every 2 hours to obtain a satisfactory concentration of 200ppm.

      • Build-up of scum was noted inside the ice machine. - ensure the ice machine is thoroughly cleaned to prevent the contamination of ice and the growth of mold.

      • Build-up of dust and debris was noted on the top shelving units above the food prep area. - ensure that all surfaces are kept in a clean and sanitary manner to prevent the contamination of food.
