- Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher not achieving the minimum required concentration of chlorine at final rinse, even after priming three times. Facility is equipped with a 3 compartment sink for manual dishwashing. No reusable dishware used for customers.
- Corrective Action(s): Do not use the dishwasher until repaired/serviced. All dishwashing must be done manually following the proper procedures as discussed.

- Observation (CORRECTED DURING INSPECTION): All equipment that have been run through the dishwasher today have not been properly sanitized.
- Corrective Action(s): Discussed with manager, all items must be sanitized again manually using QUATS.

- Observation: Cleaning for food debris and flour accumulation is required in the following areas:
- > Under the prep table in the back room
- > Under the dough proofer and in the crevice between the proofer and the white shelf

- > Around the dishwashing area - lot of moisture present around the sink
- Corrective Action(s): Clean and sanitize the premises as per your sanitation plan. Removing food debris and moisture will help to prevent the presence of pests.

- Corrective Action(s): Service the dishwasher ASAP. Must be capable of dispensing 50-100ppm chlorine for sanitizing.
- Until serviced, all equipment, dishes and utensils must be manually sanitized at the 3 compartment sink using 200ppm QUATS solution,

- Observation (CORRECTED DURING INSPECTION): - Insert of jalapeno ranch dressing (in line cooler) was above 4C. Internal temperature of product measured 9.9C.
- Product label states keep refrigerated. Staff reported product was placed in cooler in the morning. Unknown how long product has been above 4C.
- Note: Other potentially hazardous foods stored in cooler and cooler itself were maintained at 4C or colder
- Corrective Action(s): - Corrective action taken: Insert of jalapeno ranch dressing noted above was discarded at time of inspection.

- Observation (CORRECTED DURING INSPECTION): - Soiled cloth used for wiping food contact surfaces. Sanitizer in spray bottle was being used; however, in use cloth not kept in sanitizer solution to prevent microbial growth.
- Corrective Action(s): - Keep in use wiping cloths in sanitizer solution or use clean cloth (or paper towel) each time. Follow established sanitation procedures.
- Note: Operator reviewed sanitation procedures at the time of the inspection. Procedures state that a clean cloth is to be used.

- Observation: - Temporary splash guard (piece of metal) installed at warewashing sink. Duct tape used to affix metal. Duct tape is not a suitable maeterial/surface. Crevices/folds also noted in material where debris can collect. Design/installation not suitable.
- Corrective Action(s): - Remove temporary splash guard and install proper splashguard. Surfaces must be durable and easily cleanable without crevices where debris can collect.

- Observation (CORRECTED DURING INSPECTION): QUAT sanitizer in spray bottles measured at 400ppm. This is too strong.
- Corrective Action(s): The sanitizer solutions were diluted with more water at the time of inspection. Test strips are present but the color indicator label is off. Equip a new test strip with a color indicator to refer to. Follow manufacturer's instructions to make 200ppm QUAT sanitizer. The final product has a very faint pink tint.
