- Observation (CORRECTED DURING INSPECTION): When asked, the operator had mentioned that some tools are washed with water after sanitizing step. The proper method of manual dishwashing was discussed at this time.
- Corrective Action(s): Ensure to have all tools/equipment washed with soap and warm water (45'C) --> rinsed with warm water (45'C) --> soaked in 200ppm Quats for at least 30 seconds --> AIR DRIED. DO NOT RINSE WITH WATER.
- Ensure all serving tools/cutters are washed/sanitized every 2-4 hours as discussed at this time.
